3 medium yellow onions
500g of sourdough discard (1.75 cups)

1 1/2 teaspoons kosher salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon paprika smoked preferred
1/2 teaspoon cayenne pepper
Cooking oil for frying like peanut, avocado, or rice bran
Use dutch oven and heat oil to 375 measured with infrared thermometer.
Mix batter and let sit for 10 minutes.
Dip 1/4” sliced onion rings into batter.
Fry for 3-4 minutes each, in batches.
